Broccoli Parmesan Pasta

Introducing one of my favorite “lazy” dishes courtesy of my fantastic mother in law! This dish is so easy to make, and can be personalized depending on what veggies you love! We’ve made it with onions, peppers, broccoli and sometimes add mushrooms (for Paul). At the end of the day, whatever you add you can’t go wrong – especially once it’s topped with parmesan and butter 🙂

Ingredients

  • 2 cups of your favorite pasta, I prefer gemelli or a penne for this particular dish. I don’t think long or thick noodles would work great as it’s more of a butter parmesan sauce.
  • 4 chicken sausages sliced (I use Aidell’s pineapple bacon – THE BEST!)
  • 2 onions, sliced
  • 1 pepper
  • 2 tablespoons of butter
  • 1 cup of parmesan cheese
  • EVOO
  • Salt & pepper to taste

Directions

Chop broccoli and season with olive oil and salt, bake at 350* for 20 minutes.

Cook pasta according to instructions in a salted pot of water.

Heat olive oil over medium heat in a large pan. Add onions & peppers, season with salt & pepper and saute. Add sausage. Cook over medium until broccoli is ready. Once broccoli is cooked, add to pan with a splash of pasta water and 1/2 cup of parmesan cheese. Mix together and cook on medium low.

Once pasta is al dente , add directly to pan with 2 tablespoons of butter, the rest of the parmesan cheese and a splash of pasta water and mix together. Serve & enjoy!
